"We are very excited to introduce Atalon's first white wine, which is full of exotic fruit notes and a round texture. For those who enjoy their Sauvignon Blanc ice cold, please do, but the wine actually gets better as it warms up a bit. We are also proud to say that the grapes we used, from the Yountville AVA, are organically grown.
The growing season for Sauvignon Blanc was a little on the fast side. Vineyards ripened early similar to 2001 and 2004. The grapes were harvested on August 31, 2007. This vineyard has no irrigation and a very hot heat wave popped the sugar content up. We picked because nature said so. The grapes were whole cluster pressed to obtain a soft structure. The juice was cold fermented to retain the fruit notes from the variety. Close to the end the fermenting wine was transferred to barrels for aging. The wine aged in these older barrels for three months to evolve the wine a bit. After which the wine was bottled." - Tom Peffer, Winemaker
